Bonkers chef Heston Blumenthal has set his sights on a suitably bonkers new aquarium.
Over 20 feet tall and set to house 4,000 moon jellyfish, Blumenthal’s massive aquarium will take centre stage at his new bar. The bar, Resonance, will form part of the pioneering chef’s first-ever restaurant in Dubai.
Branded Dinner by Heston Blumenthal like several of his other restaurants, the pricey eatery will be based at the brand-new Atlantis The Royal. Due to open next year, the so-called ultra-luxury hotel boasts a total of 17 restaurants. However, only Heston’s comes complete with a massive bar-based jellyfish tank – touted, in fact, to be the biggest in the world.
Marketed as a first-of-its-kind cocktail bar, Resonance will offer live music and DJs to entertain revellers as they strut their stuff around his huge jellyfish aquarium.
Jellyfish and chips
Dinner by Heston Blumenthal Dubai and its accompanying cocktail bar promise what the celebrity chef calls “quantum gastronomy”.
Diners can expect a cutting-edge take on historic British cuisine, some of which dates back to the 14th century. That includes Blumenthal’s famous ‘meat’ fruit, a playfully named tipsy cake, and a spit-roast pineapple pudding first served by his predecessors hundreds of years ago.
Back on the subject of his new aquarium, it’s worth remembering that the chef once claimed the future of food was jellyfish and chips. Let’s just hope his thousands of moon jellies don’t end up on the menu…
